This slow cooker Cajun potato soup quickly became a favorite in my house especially on chilly evenings when we crave something warm and satisfying.
Ingredients
- Potatoes: 1.5 lbs (700 g) russet potatoes peeled and diced
- Onion: 1 medium yellow onion diced
- Celery: 2 celery stalks diced
- Carrots: 2 medium carrots diced
- Red bell pepper: 1 diced
- Garlic: 3 cloves minced
- Broth: 4 cups (1 L) low-sodium chicken or vegetable broth
- Milk: 1 cup (240 ml) whole milk (or unsweetened plant-based milk for vegan option)
- Cream: 1/2 cup (120 ml) heavy cream (or coconut cream for dairy-free)
- Cajun seasoning: 2 tsp (store-bought or homemade)
- Smoked paprika: 1/2 tsp
- Dried thyme: 1/2 tsp
- Black pepper: 1/4 tsp
- Cayenne pepper: 1/4 tsp (optional for extra heat)
- Salt: 1 tsp or to taste
- Corn kernels: 1 cup (150 g) fresh or frozen (optional)
- Sausage: 1 cup (125 g) cooked andouille or smoked sausage sliced (omit for vegetarian)
- Green onions: 2 sliced (for garnish)
- Fresh parsley: chopped (for garnish)
Instructions
- Step 1:
- Add the potatoes onion celery carrots bell pepper garlic corn (if using) and sausage (if using) to the slow cooker.
- Step 2:

- Cover and cook on low for 6&7 hours or on high for 3&4 hours until potatoes and vegetables are tender.

- Using a potato masher or immersion blender mash some of the potatoes directly in the slow cooker to thicken the soup leaving some chunks for texture.
- Step 5:
- Stir in the milk and cream then cook uncovered on high for an additional 20&30 minutes until heated through.
- Step 6:
- Taste and adjust seasoning as needed.
- Step 7:
- Serve hot garnished with green onions and parsley.
