This slow cooker Cajun potato soup quickly became a favorite in my house especially on chilly evenings when we crave something warm and satisfying.

Ingredients

  • Celery: 2 celery stalks diced
  • Carrots: 2 medium carrots diced
  • Red bell pepper: 1 diced
  • Garlic: 3 cloves minced
  • Broth: 4 cups (1 L) low-sodium chicken or vegetable broth
  • Milk: 1 cup (240 ml) whole milk (or unsweetened plant-based milk for vegan option)
  • Cream: 1/2 cup (120 ml) heavy cream (or coconut cream for dairy-free)
  • Cajun seasoning: 2 tsp (store-bought or homemade)
  • Smoked paprika: 1/2 tsp
  • Dried thyme: 1/2 tsp
  • Black pepper: 1/4 tsp

Stir in the milk and cream then cook uncovered on high for an additional 20&30 minutes until heated through.
Step 6:

Step 7:
