# Method:

01 - Place peeled and cubed potatoes in a large pot and cover with cold water. Add 1 teaspoon salt and bring to a boil. Cook until potatoes are fork-tender, about 15 to 18 minutes. Drain and return potatoes to pot. Mash with butter, milk, shredded cheddar cheese, and ground white pepper until smooth and creamy. Keep warm until serving.
02 - While potatoes cook, heat olive oil and unsalted butter in a large skillet over medium-high heat. Season pork chops with kosher salt and black pepper. Sear pork chops for 3 to 4 minutes per side until golden brown and cooked through to an internal temperature of 145°F (63°C). Add fresh thyme sprig to skillet for flavor if desired. Remove pork chops from skillet and tent with foil to rest.
