01 - 1 pound carrots, peeled and sliced into 1/2-inch pieces

02 - 2 tablespoons unsalted butter
03 - 2 tablespoons pure maple syrup
04 - 1 1/2 tablespoons bourbon
05 - 1 tablespoon light brown sugar
06 - 1/2 teaspoon kosher salt
07 - 1/4 teaspoon black pepper

# Method:
01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - Place the prepared carrots in a single layer on the lined baking sheet.
03 - In a small saucepan over medium heat, melt the butter. Stir in the maple syrup, bourbon, brown sugar, kosher salt, and black pepper. Allow to simmer for 1-2 minutes until the mixture slightly thickens.
04 - Pour the prepared glaze over the carrots on the baking sheet. Toss thoroughly to ensure all pieces are evenly coated.
05 - Roast in the preheated oven for 25-30 minutes. Stir the carrots once halfway through the roasting time, until they are tender and the edges are caramelized.
06 - Transfer the glazed carrots to a serving dish. If desired, garnish with fresh chopped parsley. Serve warm.
