01 - 1½ cups pitted mixed olives (green and black)
02 - 200 grams feta cheese, cut into 1 cm cubes

03 - 3 tablespoons extra virgin olive oil
04 - 1 tablespoon freshly squeezed lemon juice
05 - 1 teaspoon dried oregano
06 - 1 teaspoon fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - ½ teaspoon red pepper flakes (optional)
09 - Freshly ground black pepper, to taste
→ Garnish
10 - 2 tablespoons fresh parsley, chopped
11 - Zest of ½ lemon
# Method:
01 - Place the mixed olives and feta cubes into a medium bowl.
02 - Whisk together olive oil, lemon juice, dried oregano, fresh thyme (if using), sliced garlic, red pepper flakes, and black pepper in a separate small bowl.
03 - Pour the marinade over the olives and feta, gently tossing to ensure even coating without breaking the feta.
04 - Cover and refrigerate for at least 30 minutes, up to 4 hours for enhanced flavor.
05 - Bring to room temperature before serving. Sprinkle with chopped parsley and lemon zest, toss gently, and present.
