01 - 2 slices whole grain or sourdough bread

02 - 1 ripe avocado

03 - 1 tablespoon everything bagel seasoning
04 - 1 teaspoon extra-virgin olive oil

06 - 2 large eggs (fried, poached, or soft-boiled)
07 - 2 tablespoons crumbled feta cheese

# Method:
01 - Toast the bread slices to your preferred level of crispness.
02 - Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash with a fork until mostly smooth. Stir in lemon juice, olive oil, and a pinch of salt.
03 - Spread the mashed avocado evenly over the toasted bread.
04 - Sprinkle generously with everything bagel seasoning.
05 - Add any optional toppings, such as fried or poached eggs, feta cheese, fresh herbs, or a dash of red pepper flakes.
