01 - 1.5 lbs ripe tomatoes, sliced
02 - 1 small red onion, thinly sliced
03 - 2 cloves garlic, minced
→ Cheese
04 - 4.5 oz fresh mozzarella, torn or sliced
05 - 1/4 cup grated Parmesan cheese
→ Herbs & Seasoning
06 - 2 tbsp extra-virgin olive oil
07 - 1 tsp dried oregano
08 - 1/2 tsp dried basil
09 - Salt and black pepper, to taste
→ Garnish
10 - Fresh basil leaves (optional)
# Method:
01 - Preheat the oven to 400°F.
02 - Lightly grease a medium baking dish with olive oil. Arrange half of the tomato slices in a single layer.
03 - Scatter half of the red onion slices and minced garlic evenly over the tomatoes. Season with salt, black pepper, dried oregano, and dried basil.
04 - Distribute half of the mozzarella over the layered vegetables.
05 - Repeat the layering process with the remaining tomatoes, onion, garlic, seasonings, and mozzarella.
06 - Drizzle the olive oil evenly over the top and sprinkle grated Parmesan cheese.
07 - Bake in the preheated oven for 20 to 25 minutes, until the cheese is golden and bubbling, and the tomatoes are tender.
08 - Allow to cool slightly, then garnish with fresh basil leaves before serving.
