# Method:
- Preheat oven to 425°F. Line a large rimmed sheet pan with parchment paper or foil for easy cleanup.
- In a large bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice. Add chicken pieces and toss to coat evenly.
- Place the marinated chicken on one side of the sheet pan. On the other side, spread sliced bell peppers, red onion, cherry tomatoes, black beans, and corn evenly. Drizzle vegetables lightly with olive oil and season with salt and pepper.
- Roast in the oven for 25 to 30 minutes, stirring the vegetables halfway through. Continue until chicken reaches internal temperature of 165°F and vegetables are tender with slight charring.
- While roasting, prepare rice and desired toppings including shredded lettuce, cheese, salsa, sour cream, avocado slices, cilantro, and lime wedges.
- Divide rice evenly among four bowls. Top with roasted chicken, vegetables, black beans, corn, and add chosen toppings. Serve with tortilla chips or warm tortillas if preferred.
