# Method:
01 - Whisk together the flour, baking powder, and salt in a medium bowl.
02 - In a large bowl, beat the unsalted butter and granulated sugar until light and fluffy, approximately 2 to 3 minutes.
03 - Add the egg, vanilla extract, and almond extract if using. Beat until fully combined.
04 - Gradually add the dry ingredients to the wet mixture, stirring until a cohesive dough forms.
05 - Divide the dough in half, shape each into a disc, wrap tightly in plastic wrap, and refrigerate for a minimum of one hour.
06 - Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
07 - On a lightly floured surface, roll out one disc of dough to 1/4-inch thickness. Cut into oval or round shapes using a cookie cutter or glass.
08 - Place cookies at least 1 inch apart on prepared baking sheets. Bake for 10 to 12 minutes or until edges turn light golden. Transfer to a wire rack to cool completely.
09 - Mix powdered sugar, milk, and vanilla extract until smooth and pourable. Tint a portion of the icing brown with gel food coloring.
10 - Spread brown icing over cooled cookies for reindeer faces. Attach red candies for noses, black candies for eyes, and mini pretzels for antlers using the icing. Add optional sprinkles or glitter. Let icing set before serving.
