# Method:
01 - Preheat oven to 375°F (190°C).
02 - In a large skillet, melt 2 tablespoons unsalted butter over medium heat. Sauté diced jalapeños, red bell pepper, corn, and minced garlic for 3 to 4 minutes until fragrant and tender. Remove from heat.
03 - In a mixing bowl, combine softened cream cheese, sour cream, 1 cup shredded cheddar, and Monterey Jack cheese. Mix until smooth.
04 - Add sautéed vegetables, spring onions, smoked paprika, salt, and black pepper to the cheese mixture. Stir thoroughly until the mixture is uniform.
05 - Transfer the combined mixture to a lightly greased 9-inch round or similar baking dish.
