# Method:
01 - Heat olive oil in a large pot over medium heat. Add diced onion and carrot; cook for 4 minutes until beginning to soften.
02 - Incorporate minced garlic and diced red and green bell peppers. Continue cooking for 3 minutes.
03 - Add ground cumin, chili powder, smoked paprika, ground coriander, dried oregano, cayenne pepper if using, salt, and black pepper. Stir and cook for 1 minute until aromatic.
04 - Stir in tomato paste, diced tomatoes, black and kidney beans, corn kernels, and vegetable broth. Mix thoroughly.
05 - Bring to a boil, reduce heat to low, and simmer uncovered for 25 to 30 minutes, stirring occasionally until thickened and vegetables are tender.
06 - Taste and adjust salt or spices as preferred.
07 - Serve hot with optional toppings such as cilantro, green onions, lime wedges, or avocado slices.
