01 - Set the oven to 400°F and allow it to fully preheat.
02 - In a large bowl, combine chicken thighs with olive oil, Cajun seasoning, smoked paprika, salt, and black pepper. Toss until the chicken is thoroughly coated.
03 - Place the seasoned chicken thighs on a baking tray lined with parchment paper. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F and juices run clear.
04 - While the chicken cooks, mix cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a bowl until evenly combined. Chill until ready to use.
